While it takes about 9 hours to brew, there’s very little hands on work involved. Simply set it up before bed and wake up to a crisp, ready to drink coffee that’s perfect over ice.
Wet your paper filter and place it in your pour over brewer. Grind and measure 30 grams of coffee. A medium to coarse grind works well for this recipe. Add the coffee grounds to the filter and level the coffee bed. Carefully place 500 mL of ice on top of the coffee grounds. Allow the ice to melt naturally, letting the water slowly drip through the coffee. This typically takes about 9 hours, making it a great recipe to prepare overnight. Once all of the ice has melted, serve the coffee over fresh ice if desired and enjoy.

Brew time depends on room temperature, ice cube size, and your brewer. I used the Kalita Wave, medium ice, and the room temperature was about 70°F.

While the milk infuses, prepare the espresso. Pull 2 shots of espresso or mix the instant espresso with hot water.
Stir the chocolate syrup into the espresso until combined.
Strain the infused milk through a fine-mesh strainer into a microwave safe cup or bowl. Avoid pressing too firmly on the graham crackers, as this can make the milk gritty.
Reserve two tablespoons of the infused milk into a container with a lid and set aside. You will use this later for the cold foam.
Warm the remaining infused milk in 30 second increments until slightly hot. Stir after each time.
Pour the warm infused milk into the espresso mixture and stir.
In a small microwave safe cup or bowl, add a marshmallow and a very small amount of water.
Microwave for 30 seconds and mix. You want the marshmallow to be melted.
